Arctic Rice & Beans
INGREDIENTS:
1 lb Dried Red Peas or Pigeon Peas
1/2 Cup Coconut milk
2 Quarts of Water
1 tsp of Salt
Dash of Allspice
1 whole Scotch Bonnet Pepper
Dried thyme
1 Ripe Tomato (Cubed)
1/2 tbsp Olive Oil
1/2 Cup Chopped Onions
1/2 Cup Chopped Sweet Peppers
1 tsp Minced Garlic
1 stalk of Scallion chopped
1 1/2 - 2 Cups of Rice
COOKING DIRECTIONS:
- Rinse beans.
- Soak overnight or boil for 1 hour before cooking.
- Saute onions, tomato, garlic, sweet peppers and scallion in olive oil
- Place water, peas, salt, allspice, thyme, scotch bonnet pepper, and coconut milk in a large pot
- Bring to a boil
- Add the rest of the ingredients except rice.
- Cover and let simmer on lo/medium heat for 1 1/2 hrs or until beans are tender adding more water if needed.
- Add rice turn heat to low and let simmer for 20 minutes or until rice is cooked and all the liquid is absorbed.
- Can be served with Meat Dishes, Fish, or as a main course for vegetarians.
