4 thick slices of Halibut 1 Onion thinly sliced Pimento Seeds 1 clove Garlic 1/2 tsp Black pepper 1/4 tsp Crushed Scotch Bonnet peppers 1/2 tsp Seasoned salt 1/2 bottle Red Stripe beer or Dragon Stout 1 bottle Walker's Woods Jerk Seasoning |

| COOKING DIRECTIONS | ||

Mix seasonings, 1/2 of the beer and 1/2 bottle of the Jerk Seasoning.
Rub seasoning mixture over the Halibut slices. Cover and refrigerate overnight to marinate. The next day, bake marinated Halibut in 350F oven for 10 - 15 minutes, or grill for 10 minutes. Remove from the oven and brush on the remainder of the Jerk Seasoning and the beer. Return Halibut to oven and return to the heat for an additional 10 minutes. Serve with Red Beans & Rice, fried plantains, a salad and wash it down with some Arctic Rum Punch. Serves 4. |
