Yaadie HOT Chicken
INGREDIENTS:
3 Skinned Chicken Breasts chopped in 2" squares
1 can Chicken Broth
1 Ripe Tomato (Cubed)
1 package frozen Spinach
1 package frozen mixed vegetables
1 package Goya Sazon
1 package spaghetti
1/2 tbsp Olive Oil
1/2 Cup Chopped Onions
1/2 Cup Chopped Sweet Peppers (green, gold, and red)
1 Minced Garlic clove
1 stalk of Scallion chopped
1 finely chopped Scotch Bonnet Pepper (optional)

COOKING DIRECTIONS:

- Cook spaghetti following package instructions
- Saute onions, tomato, garlic, sweet peppers, scotch bonnet pepper, and scallion in olive oil
- Add Chicken and cook on each side about 2 minutes each.
- Add Chicken broth and Sazon
- In another pot heat Spinach and mixed vegetables.
- When Chicken is cooked and spinach and mixed vegetables are heated, mix them together with the cooked spaghetti.
- Let heat for a minute or two under low to medium heat.
- Serve hot with a salad and some Arctic Rum Punch.
